Overview of Training

This online training course is designed to enable you to experience key aspects of the award-winning Food is Elementary (FIE) curriculum. FIE has been successfully taught in hundreds of schools in the US and abroad to people of all ages and backgrounds. FIE is a wonderful hands-on way for educators to promote the health of people and the planet via positive sensory-based education. The academic disciplines are integrated in the lessons which provides a holistic, fun way to learn while demonstrating key concepts. FIE uses food, nutrition, ecology, and agriculture in ways that are practical to promoting wellness and enjoyable to experience. The Food Studies Institute’s research has demonstrated that people will remember what they learn when their senses are engaged and share what they learn with others.

Course Outline 

Week 1. Introduction to Food is Elementary
Introduction to the framework of Food is Elementary and the strategy behind it.

Week 2. Food is Elementary Unit 1. Nutrition & Health 
Become familiar with the nutrition & health lessons. Your assignment is to choose one lesson, teach it to a group of people, write a journal reflection about the experience, and discuss it with the group in next week’s class.

Week 3. Food is Elementary Unit 2. Fantastic, Fresh Whole Foods 
Become familiar with the whole foods lessons. Your assignment is to choose one lesson, teach it to a group of people, write a journal reflection about the experience, and and discuss it with the group in next week’s class.

Week 4. Food is Elementary Unit 3. Cooking Legumes Around the World Lessons
Become familiar with the cooking lessons. Your assignment is to choose one lesson, teach it to a group of people, write a journal reflection about the experience, and discuss it with the group in next week’s class.

Week 5. Summary
Summarize learning and complete test for certificate and course evaluation by May 31.
