Antonia Demas, PhD, Founder and Director




Dr. Antonia Demas, founder of FSI, does extensive consulting, training, writing and research for the institute.





Ariel Demas, M.A., Deputy Director

Ariel Demas is the Deputy Director of FSI. She has a BS degree from Cornell University in Rural Sociology. Food education has been an ongoing positive part of  her life. She moved to Baltimore, Maryland in 2004  to  teach students in a public school  (Hampstead Hill - preK - 8th grade) and pilot the the Food is Elementary curriculum in Baltimore City through hands-on learning about how to grow and cook nutritious foods of the world. She also taught students nutrition and about how food affects their minds and bodies. The program includes food-based classes during the school day, an organic garden club, culinary arts club, community dinners, and healthy snacks at school meetings and events. After five successful years developing the food education program in Baltimore, she completed a Masters Degree in education at Goddard College in Vermont

Meredith Reilly, Webmaster

Meredith Reilly studied Biology and Nutrition at Cornell University's College of Human Ecology, graduating with a B.S. in 2003. She conducted research with FSI in 2002, designing and implementing a pilot study at a boy's detention facility in Byron, CA. She enjoys working with Dr. Demas in a variety of ways, most recenly as Institute's Webmaster. Meredith is an avid outdoorswoman and guides canoe and cycling trips which are focused on health and wellness. She loves kale more than any other food on the planet!
